Barley and split pea soup


1 large onion

2 cloves garlic, crushed

500g chopped, tinned tomatoes

1 litre vegetable stock

500g mixed barley and split peas (often sold as “soup mix”)

5 carrots, peeled and chopped

4 sticks celery, chopped

3 bay leaves

3 tsp ground cumin

2 tsp ground corriander

1 tsp paprika

1 tsp chilli powder

1 lemon


Heat olive oil in a pan, saute onion and garlic and spices. Add carrots, then tomatoes, bay leaves, and barley etc. At this stage either transfer to slow cooker or bring to the boil. Add celery once other things are almost cooked, so that it doesn’t get too soft. Especially if freezing.
